Eating Light: 3 Recipes

Ok, I know I promised I’d be through with this eating light stuff… but in time for V-day, I thought I’d give you a fun one — three quick and easy recipes to make eating light a little more fun!

Salad Dressing

Start your meal off with a colorful salad.

Puree 1/2 cup nonfat yogurt, 1 cup fresh herbs, and 1-2 tablespoons citrus juice. Thin with a little skim milk and add pepper if you wish.

Sour Cream Substitution

Use this for your baked potatoes, or any of those other dishes you just can’t live without sour cream on!

Combine 1/2 cup low-fat cottage cheese with 1/4 cup skim milk and 2 teaspoons lemon juice (use your blender) until smooth and creamy. Cover and you can keep this in your fridge for 4 days. Blend with herbs or seasonings for a dip if you like.

Homemade Whipped Cream

Pour nonfat evaporated milk into a cake dish or pie pan and freeze until ice crystals form around the edges. (Put your mixing bowl and beaters in the freezer at the same time to keep them nice and cold as well.) Then turn the icy-cold milk and 1/2 to 1 teaspoon vanilla extract into mixing bowl and whip until fluffy. Beat 1 or 2 tablespoons confectioners sugar in as well to sweeten. Delicious, no additives whipped cream!

Love the subsitute ideas. You can also subsitute plain flavored Chobani Greek Yogurt for sour cream. It states extremely similar!
