Valentine’s Day Charm

Valentine’s Day can often be stressful, especially in work environments.  So, make something easy and thoughtful for your co-workers.

I made fun and ridiculously easy cupcakes. Here is the recipe (yield, 16 large cupcakes):

2 sticks of butter

1 cup of superfine sugar

2 cups of flour

4 eggs

1 teaspoon of vanilla

Preheat the oven to 350 degrees. Mix all of your ingredients with an electric mixer until smooth and pale. Place baking cups in the muffin pan and fill each cup half way.  Bake for around 20 minutes (or when you stick in a toothpick and it comes out clean). Allow to cool for 20 minutes.  Chocolate icing is a good selection.

Presentation is everything and if you have a few more minutes, you can take this little Valentine’s Day gift an extra step.   Cut out a few hearts on any kind of paper you desire. In the picture I used a deep purple card stock with glitter (purchased at Michaels) and attached it to clothespins using tacky glue.  I also figured out how to print the recipe for the cupcakes on a doily. There was no science to this just trial and error, and using small amounts of tape to keep the doily on the paper and manually feed each one through the printer. 

Total time 2 hours and completely worth the smile on everyone’s face! Happy Valentine’s Day!
