Memaw made this cake for my dad and uncles when they were kids, she made it for us grandkids too and now we are making this delicious and perfect autumn cake. This is great for dinner guests, just for fun or as a new addition to your Thanksgiving meal.
1 cup butter (2 sticks)
2 cup sugar
1 tsp baking powder
1 cup cocoanut ground
1 cup crushed pineapple
1 cup chopped pecans
1 12-oz box of crushed vanilla wafers.
Cream the butter and sugar. Add eggs, one at a time, while beating into creamed mix. Add in all other ingredients, but you will want to drain your pineapple if you use canned. Put in tube pan (pictured below) lined with greased parchment paper. Bake at 300 for 1 hour and 20 minutes.
