Whether aluminum, metal, or glass, here’s everything you need to know about which pan to cook in.

  • Bake a custard-style pie in a glass pan as glass absorbs heat better than metal.
  • You may freeze pie doughs for future use for up to 6 months if you put it in a plastic bag, airtight. Make sure to defrost your pastry completely before baking, especially if you’re cooking in a glass pan. make sure they are as close to room temperature as possible to prevent cracking with the oven heat.
