Clearly, Becky and I have a sweet tooth today. With all the goodies floating around, someone suggested we rename today Sugar Day instead of Valentine’s Day. Even if you don’t have a valentine this weekend, you can still have sugar!
And if you do have a valentine, you could make him or her some of these delicious and warming chocolatey treats!
Since the nuts need to soak and the balls need to chill overnight, start these tonight, so you can enjoy them on Sugar Day!
Place 1 cup chopped nuts (I use pecans) in a sealable jar. Pour 5 tablespoons of bourbon over the nuts. Seal and allow to soak overnight.
Mix 1/2 cup softened butter with one 16-ounce package of confectioner’s sugar. Fold in the bourbon-y nuts. Form into balls (about 3/4 of an inch) and refridgerate overnight.
Line a tray with waxed paper. Melt the 18 ounces of semisweet chocolate in the top double boiler over just barely simmering water. Stir frequently and scrape down the sides with a spatula so it doesn’t burn. Roll the balls into the melted chocolate to coat and arrange on the wax-covered tray. Store in the refrigerator until you serve!
